The problem here is that the EU is many dozens of stories, of varied quality, while the movies are going to be five, that we know are definitely happening.
The movies can't replace the EU because the post ROTJ EU is nearly 40 years of history in universe. If the timeline for trilogy III compares to the others than it will cover no more than fifteen years. It simply nullifies the history.
In terms of quality it's subjective. But there are arguably more than five best EU stories so you can't really have a good comparison. In fact the mediums are totally different, and that is the whole point in the first place for why an EU exists. By taking that away, you are taking away a large part of SW for people, no matter what the quality is.
Star Wars is not just a series of movies, it's been much more for over 30 years now and to pretend like that just goes away is a big disservice to the fans. To me that's the real rub, not the story issues.
