I, too, have to go with the A-wing. Starfighters are just more fun anyways. And beside that, you'd be hard pressed to pick a ship from the Prequels that is more iconic than one from the Original Trilogy.

Republic Cruiser. I love the ship, and would spend hours looking over the schematics in the Ep I ship guide. My old screensaver even used to be a picture of the cruiser (from this site):
