I would probably want white or silver, although in KotOR my favorite blade colors are the Heart of the Guardian and Mantle of the Force crystals, one in each saber. The Heart of the Guardian is a bronze-orange color, and the Mantle of the Force is a really interesting shade of blue, in KotOR 2 you can get a regular crystal that color and it's called cyan.
Honestly, though, for me, I change lightsaber colors depending on my character. I have two fanfic characters who carry one single-bladed white lightsaber. My KotOR character, as I said before, has two rather unique sabers. Another character that I've made up but never actually used (I might use her in a role-playing game one day, who knows) would carry two double-bladed (it's my character, don't judge 
) blue lightsabers, and one more with blue skin and green eyes who would use a single-bladed green lightsaber. And finally, there's my mysterious character who's not a Jedi (he's not a Sith, either) with a black lightsaber.
So as you can see, I'm quite diverse in my tastes. But since two of my characters carry a single-bladed white saber, that must be my favorite.
