With the essence transfer a Sith possesses the body of another being while destroying the essence (soul/spirit/mind or whatever you want to call it) of the being they are possessing. They take over the body and destroy the mind of their victim to achieve immortality. A Jedi ghost is just that, a ghost. But with Palpio, he was using clones, so no one got harmed. But, people got hurt as a result of him being alive, so I guess his transfer wasn't for a good reason, thus being dark side. The ultimate goal of the Jedi was never immortality (even though they can achieve it via Force ghost). The Sith seem to be obsesed with immortality. Why did Simus bother to live on? Or Karness Muur for that matter? Is that really better than becoming one with the force?
