Thinking about it, the stories I'd recommend reading, if you want to catch up, are the ones I didn't like. So while my list would include the Thrawn trilogy, the X-Wing books, I'd still include the Jedi Academy trilogy - and then read I, Jedi. The JAT isn't the best series of books I've ever read, but I view it as necessary so that you understand where a lot of these characters come from. And I, Jedi helps plug a few holes (and if you read it afterwards, you can think of it as rewarding yourself for finishing such an abysmal series of books!).
Another on that list - though a bit more enjoyable - is Courtship of Princess Leia. The Dathomiri culture is interesting to read about, as well as the Hapans - who are more active participants in later EU.
Another series is the Corellian trilogy. I hesitate to put this in there, but Thracken Sal-Solo does pop up every now and then in later books, so you might as well read from the source.
The last on my list of bad-books-that-can't-be-swept-under-the-carpet-because-of-their-impact is the Dark Empire trilogy. It's referenced so much that it's hard to ignore, but it's a comic so it'll only take about two days out of your life. As was noted by Crash in another thread, Luke Skywalker and the Shadows of Mindor does a lot to explain and ease the story of DE, so reading that beforehand could be helpful (and it's a very good book, and shouldn't be associated with my list of books that suck).
Sorry! I know my listing these books in a way that may make it seem daunting is a tad unfair, but the upside is that I view these as an essential group, yet are small in number, and the good books outnumber and more than make up for that lot. So my list would be similar to the others:

That doesn't mean that I hate or love Jar Jar. That doesn't mean I hate or love Lucas, or agree or disagree 100% with him. That doesn't mean I prefer the PT over the OT, or vice versa. That doesn't mean I hate the EU, or even love all of it. These are not prerequisites. Being a man is not a prerequisite. Being a geek is not a prerequisite. The only prerequisite is that I love something about Star Wars. I am a Star Wars fan.
