I would not. Grittier ≠ better.
The idealized nature of Star Wars is one of the reasons I fell in love with it after I watched the OT. Luke is a good guy, Palpatine is a bad guy. The EU gets a little more into character psychology, which is fine, but for the most part Star Wars has stuck with the idealized, myth-like style of story-telling and I see no reason to change this. Not everything should be Watchmen or THG. _________________
