As the resident med student, its very variable. Some compounds break down in matters of minutes if exposed to air or light (hence the airtight brown glass bottles), while others can literally sit around for years.
Often natural products break down much more quickly. Two years is quite reasonable, especially if not cared for correctly.
Also, remember the Med Star Duology, they made a big deal about how fragile the Bota was? two years, not properly cared for, hidden inside a droid? Not going to help it much.
