I know I'm kinda late to the party here but I just have to add that he also changes his pants color from a navy blue to a dark brown and the bloodstripes go from red (ANH) to yellow (ESB and ROTJ). And he isn't wearing a poncho on Endor it is a camo trench coat (what Luke and Leia wear are ponchos). 
Orange goggles though make sense as odd as it may sound. For one thing, and this is just based on pictures/video, most eye-protection worn at firing ranges typically has an orange tint to it. My guess would be because mussel flash tends to be in the range of orange the orange goggles help prevent you from being blinded by it. what never made sense to me was the dark sunglass tint on the helmets worn by unnamed characters (watch the fighter launch at the end of ANH and you'll see what I mean). It just struck me as space is dark enough so why do you need dark tinted goggles?! 
Droids definitely have style. HK-47 is very VERY selective about what weapon he carries. It has to be that perfect balance between being the latest in style/weapon development and lethal efficiency afterall. He's also very conscious of means of execution.
